There is no better source of inexpensive, healthy protein than an egg.

It is also a rich source of selenium, vitamin D, B6, B12 and minerals such as zinc, iron and copper. On days you are in a hurry and fail to have a healthy meal, a quickly rustled up egg breakfast will take care of most of your nutritional requirements. Not just omelettes, you can actually make a variety of delicious egg recipes. Try them out!

1.Egg Salad Sandwich

Ingredients
Bread Slices - 4 Eggs - 2, hard-boiled, finely chopped
Mayonnaise (or Butter) - 4 tsp
Red Chilli Flakes - 1/2 tsp
Salt as per taste
Pepper Powder as per taste
Ghee as required

Optional
Tomato - 1, sliced
Spring Onions - 1/4 cup, finely chopped
Red Onion - 1, sliced
Lettuce Leaves - few, chopped

Method
- Mix the eggs, mayonnaise, red chilli flakes, salt and pepper powder in a bowl.
- Spread this on 2 bread slices.
- Top up with the tomato, spring onions, red onion and lettuce leaves.
- Cover with the remaining slices.
- Heat a tawa over low flame.
- Place the sandwiches and apply little ghee around the edges.
- Cook for 30 seconds on each side and remove.
- Serve with french fries.

2.Potato and Egg Salad

Ingredients
Potatoes - 500 gms, boiled, peeled, halved (or quartered)
Eggs - 2, hard-boiled, peeled, grated or finely chopped
Mayonnaise - 4 tblsp
Dijon Mustard - 1 tsp
Spring Onion - 1, chopped
Sun-dried Tomatoes - 2 to 3, finely chopped (optional)
Green Capsicum - 2 to 3 tblsp, finely chopped (optional)
Pepper Powder as per taste
Coriander Leaves - few, chopped
Salt as per taste

Method
- Add the potatoes to a large bowl.
- Add the eggs, mayonnaise, dijon mustard, spring onions, tomatoes, capsicum and mix well.
- Sprinkle some salt and pepper. Mix well.
- Garnish with coriander leaves.
- Cover and keep it in the fridge for 30 minutes.
- Serve.

3.Masala Scrambled Eggs

Ingredients
Eggs - 8 to 10, beaten
Onion - 1, finely chopped
Green Chillies - 2, finely chopped
Red Chilli Powder - 1/2 tsp
Salt - 1 tsp
Ginger Paste - 2 tsp
Turmeric Powder - 1 tsp
Cumin Seeds - 2 tsp
Oil - 2 tblsp
Coriander Leaves - handful, chopped

To Serve
Bread Slices - 6 to 8, toasted

Method
- Heat oil in a nonstick pan over medium flame.
- Add the cumin seeds and turmeric powder.
- Stir-fry for 30 to 45 seconds.
- Add the onions and saute for a minute or two.
- Add all the other ingredients, except, eggs and stir well.
- Cook for 2 to 3 minutes.
- Reduce flame to low and add the eggs.
- Cook for 3 to 4 minutes on each side.
- Then using a spatula gently scramble the eggs until they are cooked. 1
- Remove and serve at once with toasted bread.

4.Egg Paniyaram

Ingredients
Eggs - 4
Idli Batter - 1/2 cup
Turmeric Powder - 1/4 tsp
Pepper Powder - 1/2 tsp
Cumin Powder - 1/2 tsp
Salt as per taste
Oil as required

Method
- Pour 1/4 cup of water in a large pan.
- Add salt, turmeric powder, pepper powder and cumin powder.
- Break the eggs into the pan and beat well.
- Add the idli batter and mix well.
- Pour the batter into greased paniyaram moulds.
- Heat a pan over medium flame.
- Place the moulds in the pan and cover with a lid.
- Cook on both sides till golden brown.
- Remove and serve with mint chutney.

5.Egg Bajji

Ingredients
Eggs - 2, boiled, sliced
Gram Flour - 1/4 cup
Asafoetida Powder - 1/4 tsp
Cumin Powder - 1/4 tsp
Red Chilli Powder - 1/2 tsp
Rice Flour - 4 tsp
Maida - 4 tsp
Baking Soda - a pinch
Salt as per taste
Oil as required

Method
- Mix the gram flour, rice flour, maida, baking soda, red chilli powder, asafoetida powder, salt and cumin powder.
- Add enough water and mix well to a bajji batter consistency. The batter should not be too thin or too thick and should be of pouring consistency.
- Heat oil in a frying pan.
- Dip the egg slices in the batter and add to the hot oil.
- Fry till golden brown.
- Remove and drain excess oil.
- Serve hot with chutney of choice.
